Pour d\u00e9signer le sucre de canne cristallis\u00e9, les Hindous et les Chinois utilisaient alors le terme sanscrit \u00ab sarkara \u00bb qui deviendra le radical de \u00ab sucre \u00bb dans toutes les langues indo-europ\u00e9ennes.<\/span><\/p><p>Christophe Colomb importa la canne \u00e0 sucre aux Antilles d\u00e8s 1493. Aujourd\u2019hui, la canne est le produit de l\u2019hybridation de plusieurs esp\u00e8ces \u2014 la sauvage Saccharum robustum de Nouvelle Guin\u00e9e ; la rustique Saccharum spontaneum, plus r\u00e9sistante aux cyclones gr\u00e2ce \u00e0 ses profondes racines, ou encore, la noble Saccharum officinarum plus riche en sucre. Constitu\u00e9es d\u2019une succession de n\u0153uds et d\u2019entre-n\u0153uds de dix \u00e0 quinze centim\u00e8tres, les tiges sont jaunes, vertes, violettes ou brunes selon leur vari\u00e9t\u00e9 et leur exposition. Aux Antilles, en novembre et en d\u00e9cembre, certaines d\u2019entre elles \u00e9mettent des inflorescences blanches, grises ou violac\u00e9es : ce sont les \u00ab fl\u00e8ches \u00bb.<\/p><p>Le cycle v\u00e9g\u00e9tatif est de douze mois. La multiplication s\u2019effectue par bouturage de tron\u00e7ons ligneux. Les bourgeons donnent naissance \u00e0 des tiges qui se ramifient successivement pendant quatre mois. La r\u00e9colte consiste \u00e0 couper les cannes le plus pr\u00e8s possible du sol et \u00e0 en \u00e9liminer les sommets, ou \u00ab bouts blancs \u00bb. Chez les petits planteurs, elle se fait au coutelas. Dans les exploitations moyennes ou situ\u00e9es sur des reliefs, la canne est coup\u00e9<\/span><\/p><p><span style=\"font-style: inherit; font-weight: inherit; color: var( --e-global-color-text ); font-family: var( --e-global-typography-text-font-family ), Sans-serif; background-color: var(--ast-global-color-5);\">e \u00e0 la main et ramass\u00e9e m\u00e9caniquement \u00e0 l\u2019aide de \u00ab cane-loader \u00bb. Dans les grandes exploitations de plaine, ce sont de grosses machines qui effectuent la coupe et le ramassage en m\u00eame temps.<\/span><\/p><p>Souvent, pour faciliter le travail des coupeurs, les champs sont br\u00fbl\u00e9s pour chasser les animaux nuisibles et d\u00e9barrasser les cannes de leurs<\/p><p>\u00a0feuilles.
